SharePoint administrator, you mean to say SharePoint Farm administrator then this role is resposible for all the Farm level activities such as
- Backup and Restore
- Disaster recovery
- patching up the environment
- monitoring the health of SharePoint servers
- Looking in to event viewer/ULS logs for critical errors that can affect the servers
- Threat management.
